Okay you guys, I’m not usually a smoothie fan… which I think stems from my issues with texture. ย To me, a smoothie should be, well, smooth. ย My old blender was the traditional kind with the little blades at the base of the blender, and it never really got my smoothies very smooth. ย There was always little pieces. So about a week ago I hit up my local Target and bought myself a Ninja blender. ย OMG, I’m in blender heaven!! ย No more chunks, ever!
Okay, on to the smoothie… so carrots. ย Were you surprised to see them in the title? ย Well each month the FoodieMamas and I have a theme, and this month the theme is carrots. ย I LOVE carrots in this smoothie… as it bumps up the nutrient factor, adds a fun color, and it makes me feel better about drinking a LOT of these… because it has a vegetable in it, it must be totally healthy right? ๐
Well that’s my total rationalization anyway ๐
Consider this a base recipe, where you can switch it up to add whichever fruits you like best!
Depending on the sweetness of your fruits, you may or may not need any sweeteners… I only needed a pinch of sugar for the perfect fresh, sweet taste.

Ingredients
- 1 cup cold coconut water or regular water
- 1 cup baby carrots
- 1 cup frozen strawberries
- 1 cup frozen mango chunks
- 1 navel orange peeled and cut into chunks
- 1 cup pineapple chunks
- 2 Tbsp granulated sugar optional
Instructions
- Add ingredients to blender and puree until smooth.

I loved this idea with the carrots! I did sub out the strawberries and sugar with cherries and honey. Left out the orange to keep serving size more appropriate for what I am going for (I’m thinking of orange and kiwi tomorrow). Thank you for this combo I love it!

Not a lover of carrots so this was super for me, as it’s really delicious and a great easy way to eat ( drink ;). carrots
I left out the sugar and used banana instead of pineapple as thats what i had, and i added a small piece of fresh ginger about 1 – 1.5 cm sq. loved it

Delicious smoothie I used all ingredients except coconut water and the granulated sugar the natural sweetness was perfect. My grandson 10 years old totally enjoyed the healthy drink as he called it ๐ I will pass this recipe on.

I wanted to use up some carrot sticks, and this recipe was perfect. I did not add any sweetener, and it was plenty sweet enough. Really pretty too!

This was really good and healthy!!! I made this smoothie for me, my aunt, uncle and 2 year-old cousin. My cousin absolutely loved it! The only changes I made were I left out the coconut water, mango chunks and granulated sugar. There was still a bit of texture from the carrots, but everybody looooved it!

I recommend cooking the carrots for 7 minutes in a lttle bit of water and fat to maximise benefits – let the mix cool down and add to the blender INCLUSIVE of the water as some vitamins will now be in the water – much healthier now and worth spending the extra time as carrots are one of the few veggies which need to be taken with fat so our bodies can absorb all nutrients and cooking makes it easier for our bodies to absorb the goodies

I know what you mean about chunky smoothies. I wasn’t a convert until I got a good high speed blender. Carrots have never made it into my smoothies before but they will now-these look absolutely gorgeous!
